Plain cooked beetroot is safe as an occasional treat and is a source of fibre and vitamins. It may harmlessly tint the urine or stool a reddish colour, which is nothing to worry about. Serve it cooked, plain and cut into small pieces, and avoid pickled beetroot, which is high in salt and vinegar.
